Kuipers Bakery: Shortbread, Fruit Cake, Mincemeat, Stollen, Plum Pudding recipes
Shortbread
• Made with real butter
• “good old” cornstarch shortbread
• Whipped and dipped shortbread
• Icing sugar
• Also, we make Almond Shortbread (also called homestyle shortbread) made with margarine/butter, chocolate and plain
• The way you can tell if you’re eating a good shortbread is that it should melt in your mouth…. and ours does
Fruit Cake
• Not light, not dark, medium cake
• Loaded with fruit
• Harold’s Fathers recipe when he was at Sally’s Bakery in the 60’s
• They have been using the same recipe for over 40 years
• Here is a tip from Curtis and Chris, when serving, the best way to cut a perfect piece of fruit cake is when its frozen, take a sharp knife dip it in a glass of warm water and cut your cake…. perfect piece every time.
• Kuipers Bakery has made over 300lbs of Fruit cake this year, so hopefully they should not run out this year
Mince Tarts
• Made with mince tart filling
• Made with sweet dough pastry
• No suet (sue it), vegetarian friendly
• Delicious a real Christmas Treat
Stollen
• Harold’s own creation of the stollen “and yes its not stollen”
• Fresh ground lemons and oranges also currents and California seedless raisins
• Some candied fruit
• Once developed it is sheeted out to about the size of a pie then layer of pure almond on top
• Rolled up into a loaf and baked
• Also have Plum pudding
Plum Pudding
• Does not contain plums
• The terms plum comes from the soaking of fruit
• Tastes great with caramel sauce (recipe provided), even better make your caramel sauce with dark rum
• Monday’s noon to 7pm
• Open Tuesday to Friday 7am – 6pm
• Open Saturdays 8am – 6pm
• Christmas Eve open 7am – 4pm
• Closed Christmas Day and Boxing Day
