Brandon businesses continue to adapt during the pandemic, and Komfort Kitchen on Princess Avenue has gone from restaurant to corner store.
Owner Derek Woychyshyn says “Breakfast, lunch, and catering was our main thing, but now that we’re not allowed to have a dining room with sit-in customers, I’ve taken all the product that we carry in the back to create the menu, and packaged it all up for home use and shopping.”
He says everything from flour and sugar – to wraps, buns and coffee are now on the shelves. “Our burger patties you can take home and cook, breakfast sausages. We are doing a bit of dessert stuff, and we are building as we go too.”
And if you’ve been missing their eggs benedict, Woychyshyn says they hope to make that available for pick-up and delivery this week. “We are kind of working out the logistics of that because it’s a very popular special on Saturdays. We want our costumers to be able to enjoy that at home too.”
Woychyshyn says Komfort Kitchen currently has 4 employees, down from 21 before the first COVID shutdown, and he hopes the new concept will allow him to rehire more of the employees he’s had to layoff.
